BUSINESS INFORMATION:
While many think of cheesecake as a New York tradition, the history of the dessert dates back at least 4,000 years. An early version was a common wedding cake in ancient Greece and was served to athletes at the first recorded Olympic games in 776 B.C. As the popular dessert spread throughout Europe and eventually to America, a variety of different cheeses were used in the recipe. New York made its mark on cheesecake in the 1900s by incorporating cream cheese, the signature ingredient of the modern American version.
The story of Strawberry Hill Cheesecakes begins in 1903 before New York cheesecake was even invented. Our family came to Kansas City from Croatia and opened a bakery using Grandmas secret recipe for povitica, a beloved traditional pastry. A few years later cream cheese arrived on the local dairy scene. Midwestern farmers were soon producing some of the best cream cheese in the world - with a perfect balance of tangy and sweet and an incomparable creaminess - and we began using the local cream cheese in our pastries.
When the popularity of a new dessert known as New York cheesecake began to spread, our family of bakers knew we had the perfect ingredient on hand to create our version. After many hours in the kitchen with Grandma, we finally perfected a cheesecake recipe that could earn her blessing. Today our fourth generation happily shares with you our family tradition of Strawberry Hill Cheesecakes.
